Like everything that surrounds tea, its origin is also placed in a distant and legendary time and world, as in a summer tale. The story tells that the emperor Shen Nung, boiled water under a tea tree, which branches were rocking with the soft breeze of the evening, when by chance a sheet felt down into the water. Instantly the aroma that it detached and the golden colour that it took seduced him to taste this drink, that suddenly make him feel better and plunge him into an unknown state of well being, becoming immediately the drink of the Empire. True or false, the plastic beauty of this story sets us in the situation that tea claims: we talk about more than a drink, a traditional medicine or a cultural feature.

The botanical name has changed, being valid for this kind of camellia either Thea Sinensis or Camellia sinensis - assamica. All the teas come from the same botanical specie and the denomination green, red, white, black, only refers to the preparation of the sheets (drying, doubled, fermentation, etc.), that always depends on the tradition of the area from where it comes, geography that logically also marks some organoleptic characteristics (Yunnan, Darjeeling, Ceylon, etc.)
